Vac-YEAH-tion Planning

Ohhhh yeah the count down is on till VACATION TIME :) We are heading off to Florida to drive the highway to FLORIDA KEYS <cue beach boys...>. Anyone ever been there??? What are the best things to do there?? Which restaurants do you recommend?!?!? I'm sooooo excited..... I just can't hide it!!! 

Not only are we leaving in less than a week.... BUT.... we are also putting down a deposit for a tickets to my cousins destination wedding in NOVEMBER :) Two trip plans SO EXCITING!!!!

What are these OATS everyone talks about....

HAPPY WEEKEND EVERYONE AND.....


I hope you have a day full of fun and excitement!!!! 

So today I was thinking about reviewing different types of OATS. Many of the bloggers I follow regularly photograph their breakfast oats. I just wanted to see what the different types are and how to cook them. So here goes, from the
Steel-cut: Also called Irish or Scottish oats, these oats are closest to their original grain form. They consist of the entire oat kernel which has been sliced once or twice into smaller pieces to help them cook.   It can take anywhere from 15-60 minutes to prepare steel cut oats. A bowl of steel cut oats has a chewy, nutty texture and is highly nutritious.
Rolled oats: These are also known as “old fashioned” oats. To get rolled oats, whole oats are toasted, hulled, steamed and then flattened with giant rollers. Muesli and granola are usually made with rolled oats. Rolled oats take about 15-20 minutes to cook.
Quick cooking oats:  These are similar to rolled oats, but they have been cut before being steamed and flattened. This helps them cook quicker. They are also good to use in baked goods such as quick breads and muffins.
Instant:  These are the kind you usually find in the flavoured packets that have added salt and sugar. To make instant oats, the oats are cut, pre-cooked, dried, steamed and then flattened. The many steps used to create instant oats is why they cook so quickly. However, because the oats go through so many processing steps most of their nutrition has been lost.

Anyhow I'm off for a workout before spending the day with my hubby and my dad!!! Enjoy the weekend... b/c they sure go by too FAST!!

Hum- yum

So I had a great day.... the nice weather (+7) for a March day.... put me in a good mood! So did trying a new recipe.....

It was so yummy, I couldn't help but eat three scoops!!! Here is a pic of how it turned out!! It seemed a bit dry but the taste was awesome! I love trying new things.

Went to the symphony with a great friend. Here is a picture from the intermission.

Went to visit another friend last weekend.... she had a surprise for us..... a COCONUT... so my hubby poked holes and we had fresh coconut juice ;)

Nite, off to watch a movie... and maybe workout!!!
I worked out 6/7 days last week :)
Vacation is coming up....

RUFF week.....

Boy oh boy... dunno what has gotten into me this week!!! Its been rough.... and I hope MY clumsiness settles down.

1st- I fell at work, dunno even know how, but I think I twisted my ankle by slipping on a rock?!?! Ended up getting checked out... nothing broken.... BUT boy... I feel sore EVERYWHERE!!! I just can't believe how much muscle pain can come from a fall.... 

Once I started healing up with advil, hot epsom baths and Japanese pain relieving patches.... I did another stupid thing...

2nd- got up this am and went to put my contacts in after soaking my contacts in a different solution from my usual.... and got a terrible burning surprise when I put the contact in!!! Looks like this contact solution needs to be used with its special container and for HARD (not soft) contacts!?!!? What a dangerous and dumb situation. I immediately took it out and rinsed and rinsed ..... saw the optometrist as soon as the office opened.... and here I am home today... doing flushes to the eye every half and hour for four hours, then every hour for a while after that!!1

I'm not sure what the heck is going on this week... but I hope the bad luck is over with?!?!?

Time for some more rest... JUST BREATHE right..... these past few days have reminded me how FORTUNATE we are to have GOOD health and GREAT families..... there is so much to love about being alive and health!!! Lets ENJOY 2DAY
